Slow Cooker Green Chile Chicken

We are all about keeping things simple so of course this chicken is a kitchen staple. It's so easy to throw together and extremely versatile. This chicken is good served in tacos, on nachos, in bowls, over salads, with fried eggs, in enchiladas, etc.

Slow Cooker Green Chile Chicken

Servings: 6

Ingredients

  • 2 pounds boneless skinless chicken breasts

  • 6 whole tomatillos

  • 1 white or yellow onion

  • 8 ounces diced green chiles

  • 1/2 tablespoon cumin

  • Salt and pepper to taste

Instructions

  1. Peel, wash, and quarter the tomatillos and the onion.

  2. If using a slow cooker... Place the chicken in the slow cooker first, then cover with remaining ingredients.Cover and cook on high for 4 hours or low for 8 hours.

  3. If using an InstantPot... There is no need for the rack. Place the chicken in first, then cover with remaining ingredients. Cook at high pressure for 15 minutes.

  4. Once done, remove the chicken breasts and shred them with a fork.

  5. Optional: Remove the cooked tomatillos, chiles, and onion from the crockpot and blend to make a Roasted Salsa Verde. If you like a hotter salsa, add some fresh jalapeno to the mixture before blending.
