Creamy Avocado Ranch Dressing
There is nothing I love more than ranch dressing, but store bought ranch usually hides several less than healthy ingredients so I came up with this healthier adaptation when making buffalo chicken salad the other night. I hope you enjoy!
Makes approximately 2 cups
1/2 large avocado, peeled and pitted
2 cloves garlic
1 inch of green onion stalk
1 tsp parsley
1 tsp dill
1 tsp fennel seeds
2 tbsp white vinegar (you can use red or apple cider vinegar here as well)
1 cup unsweetened coconut milk (you can use any milk substitute here)
Salt and pepper to taste
Add all of the ingredients to a blender and blend on high until smooth. Add more milk if you want a thinner consistency.
