10 Minute Pesto

Who doesn't love a good pesto? We like to throw together this 10 Minute Pesto and add it to meals all week. It's perfect for adding to eggs, salad dressings, roasted veggies, pasta, spaghetti squash, zoodles, pizza, meats, fish...the list goes on! We added this batch to roasted chicken and veggies to add some flavor and greens to a basic meal. We recommend using a good quality cheese like Romano or Parmesan-Reggiano. Quality extra virgin olive oil is also important. If you like a smoother pesto, add more oil!

10 Minute Pesto

Servings: 2 cups


  • 1 cup Fresh Basil Leaves

  • 1 cup Spinach

  • 1/2 cup Grated Parmesan

  • 1/2 cup Extra Virgin Olive Oil

  • 1/3 cup Pine Nuts

  • 3 Garlic Cloves, peeled

  • Salt & Pepper to taste


  1. Place everything but the olive oil in either a food processor, a blender, or an immersion blender and pulse until finely chopped.

  2. Slowly add the olive oil and blend until smooth and creamy.

  3. Store covered in the refrigerator or freeze in an ice cube tray for quick and easy meals later!
